Pastry
All-purpose four 1¼ cups
Salt ¼ tsp
Vegetable shortening ¼ cup
Cold water 5-10 tbsp
Filling
Brown Sugar 1 cup (packed)
Raisins ½ cup
Butter, melted 1/3 cup
Egg, beaten 1
Milk 2 tbsp
Vanilla 1 tsp
1. Pastry: Mix flour and salt. Cut in shortening with two knives or a pastry blender until mixture is crumbly.
2. Add water a little at a time, using just enough to bind the mixture so that dough can be patted lightly to form a ball.
3. Handle as little as possible.
4. Filling: Preheat oven to 375 ° F.
5. Roll out pastry dough. Cut into circles and use to line tart pans 3” in diameter.
6. Combine ingredients for filling and spoon into unbaked pastry shells, filling each about 2/3 full.
7. Bake for 20 minutes or until filling is cooked.
