Penne with Mediterranean Mix in Tomato Base
2 tbsp vegetable oil
1/4 cup coarsely chopped onion
1/2 cup strips or large squares of fresh red bell pepper
5 sundried tomato pieces packed in oil, cut into strips
2 tbsp capers
2 canned artichoke hearts cut into quarters
2/3 cup hot spiced mushrooms in oil OR fresh sliced mushrooms
1 can stewed tomatoes
1 tsp tomato paste
ground pepper to taste
1. In a medium saucepan on medium heat, sauté oil, onion and bell pepper until onion is translucent.
2. Add capers, artichoke hearts and mushroom and sauté for 1 minute. Add tomatoes, tomato paste and pepper.
3. Cover and simmer on low until penne is cooked. Toss the penne in the sauce and serve with a loaf of garlic bread. Enjoy!
