Lasagne noodles 500g
Olive oil 2 tbsp
Large onion 1
Garlic 5 cloves
Basil 1 tsp
Thyme 1 tsp
Black pepper 1 tsp
Oregano 2 tsp
Parsley 2 tbsp
Honey 1 tbsp
Tomatoes (diced, canned) 1 large can (796ml)
Tomato paste 1 can (156ml)
Spinach (frozen) 300g
Cottage cheese 450g
Mozzarella, grated 250-500g (to taste)
1. Heat olive oil, add onion, and cook until tender. Add garlic, spices and honey. Cook for two minutes, stirring constantly. Add tomatoes and tomato paste. Reduce heat and simmer for one hour.
2. Cook spinach and combine with cottage cheese. Cook lasagne noodles following instructions on package, or as desired. Oil a large, deep pan, then create layers: sauce, cottage-cheese mixture, noodles. Repeat for three layers and top with grated mozzarella to taste. Cook at 350° F for 60 minutes, or until cheese is melted and browned.
