Farfalle with Peas, Bacon and Mushrooms in Saffron Cream
3 strips fresh bacon cut into 1/2 inch pieces
1/2 cup fresh sliced mushrooms
1 tbsp vegetable oil
1/4 tsp minced onion
1 cup cream
1/3 cup grated parmesan
2/3 cup frozen peas
1 packet saffron
ground pepper to taste
1. Sauté bacon and mushrooms until slightly browned, then set aside.
2. Add oil to medium saucepan and on medium heat sauté the onion.
3. Add the cream and parmesan and simmer until texture is smooth.
4. Add bacon, mushrooms, peas and saffron and simmer on low for a few minutes.
5. Add pepper to taste and stir into the cooked farfalle. Serve with your favourite crusty rolls.
